Kate Welch is a 23-year-old freelance writer and student, currently based in Montreal, Canada. She grew up in the UK, attended high school in Massachusetts and has also lived in Mexico and Florida. A self-described carnivore, Kate writes her blog, The Steaks Are High, to share what she has learned about the low-carb approach to weight loss and healthy eating.

After packing on the freshman fifteen and then some, Kate and her mother decided they both needed a better approach to food. Together, they survived the first few days of Phase 1 of the South Beach Diet, handling their carb withdrawal with a Friends marathon and lots of Laughing Cow cheese wedges. Both were amazed to see how quickly the pounds melted away despite constant snacking and higher food intake. When Kate went back to school, she continued with South Beach, incorporating gym workouts and losing 20lbs in total.

However, she found the fat restriction component of South Beach made her menu options limited, and got very, very sick of salads - especially during the bitterly cold Canadian winter. After an especially sugar-crazed Christmas in 2004, Kate vowed to get "back on the Beach". However, this was easier said than done, and over the following months she swung between South Beach friendly days and carbfests. The result? A 40lb weight gain in three months.

After moving to Florida, Kate found the fantastic diet support at the Active Low-Carber Forum, and after researching various options, turned to the Atkins Nutritional Approach. The increased amount of fat allowed on Atkins Induction left her satiated, happy, and getting skinnier daily! No more constant nibbling on celery sticks or whipping up another batch of low-fat ricotta cheese "dessert", but fulfilling (and filling!) enjoyment of steaks with butter, salmon and hollandaise sauce and cheesy omelettes helped her drop those 40lbs, and keep them off.

Kate is an avid promoter of the low-carb lifestyle, and continues to stay on top of the latest nutritional studies and research. After her own struggles with weight gain and loss, she also shares her perspective on the psychology of dieting and the best ways to nourish both body and mind. A talented chef, she is always whipping up new and delicious ways to make low-carb eating even more tasty and shares her discoveries and reviews of other recipes as part of The Steaks Are High. She is an active member on both the Meat & Eggers For Life Forum and the Active Low-Carber Forum, posting under the handle "highsteaks".

Outside the realm of steaks, Kate writes fiction and reads at a voracious pace, and is also part of an exciting new approach to studying and teaching Shakespeare. Her blog Writhings chronicles the progress on her latest novel, and other musings on writing.
